With Valentine's Day approaching quickly we thought it would be a great time to share our recipe of delicious infused strawberry cheesecake bites, be careful though, these cheesecake bites are so good that your valentine may ask for you to make them again and again!

Cannabis-Infused Strawberry Cheesecake Bites:

Ingredients:

For the Crust:

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

1 tablespoon sugar

 

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup sugar

1 teaspoon vanilla extract

1 large egg

2 tablespoons cannabis-infused coconut oil or butter

 

For the Strawberry Topping:

1 cup fresh strawberries, hulled and diced

2 tablespoons sugar

1 tablespoon water

Instructions:

Preheat the Oven:
Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.

 

Prepare the Crust:

Combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until well combined.

Press a small amount of the mixture into the bottom of each paper liner in the mini muffin tin. Use the back of a spoon to pack it down.

Prepare the Cheesecake Filling:

In a mixing bowl, beat the cream cheese until smooth.

Add sugar, vanilla extract, egg, and cannabis-infused coconut oil or butter. Mix until well combined and smooth.

Fill the Muffin Cups

Spoon the cheesecake filling over the graham cracker crust in each muffin cup, filling almost to the top.

Bake

Bake in the preheated oven for about 15-18 minutes or until the cheesecake sets and a toothpick inserted into the center comes out clean.

 Cool

Allow the cheesecakes to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.

Prepare the Strawberry Topping

In a saucepan, combine diced strawberries, sugar, and water. Cook over medium heat, stirring occasionally, until the strawberries release their juices and the mixture thickens slightly.

Top the Cheesecakes

Spoon the strawberry topping over each cooled cheesecake bite.

Chill:

Refrigerate the cannabis-infused strawberry cheesecake bites for at least 2 hours or until they are thoroughly chilled.

 

Serve

Serve these delightful bites chilled, and enjoy your cannabis-infused Valentine's Day dessert!
