Campfire Munchies-Canna Cowboy Cookies

There's something genuinely magical about gathering around a crackling campfire, sharing stories under the starlit sky, and savoring the serenity of the great outdoors. But let's be honest – what's camping without some mouthwatering munchies to fuel your adventures? 

Cowboy Cookies- These delicious cookies were once known for being a nutritious snack as well as being able to keep well for extended periods out on the range, sort of like the first Wild West energy bar.


Cowboy cookies are hearty and delicious treats that are perfect for camping trips. Here's a classic cowboy cookie recipe with a twist – it includes cannabis-infused butter for an extra special touch. Remember to calculate and dose the cannabis butter accurately based on your preferences and the potency of your infused butter.


Cannabis-Infused Cowboy Cookies


Ingredients:


- 1/2 cup (1 stick) cannabis-infused butter, softened

Cookie ingredients

- 1/2 cup granulated sugar

- 1/2 cup packed brown sugar

- 1 large egg

- 1 teaspoon vanilla extract

- 1 cup all-purpose flour

- 1/2 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/4 teaspoon salt

- 1 cup old-fashioned oats

- 1/2 cup shredded coconut

- 1/2 cup chocolate chips

- 1/2 cup chopped nuts (pecans, walnuts, or a mix)

- 1/2 cup raisins or dried cranberries (optional)


Instructions:


  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  1. Cream the Butter and Sugars: In a large mixing bowl, cream (mix butter and sugar together on a moderately high speed until well blended, fluffy, and pale yellow) together the cannabis-infused butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

  1. Add the Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

  1. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

  1. Combine Wet and Dry Mixtures: Gradually add the dry mixture to the wet mixture, mixing until just combined.

  1. Fold in the Mix-ins: Gently fold in (carefully adding a light, airy mixture to a thicker, heavier mixture) the oats, shredded coconut, chocolate chips, chopped nuts, and raisins or dried cranberries (if using).

  1. Form Cookies: Using a spoon or cookie scoop, drop rounded
    cookie dough on sheet
    tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

  1. Bake: Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown around the edges.

  1. Cool:Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

  1. Enjoy: Once the cookies are completely cooled, grab a few, gather around the campfire, and savor the delicious blend of flavors and textures. Share with your camping companions and enjoy the elevated experience.
